“Heat but do not boil...Cool, but do not chill.”
More than 30 years ago Jim Wade dropped out of Old Dominion University to cook blue crabs and nachos at O’Sullivan’s Wharf. Since then he has cooked, served, bartended and managed in restaurants, cafés and brewpubs across the country, helping many struggling businesses turn things around along the way. In 2017 he created the site 86laughs.com, which became Bar & Quill, a restaurant humor site, to entertain and educate Service Industry folks with stories and advice from two decades in the business. Recently with the help of his nieces the site was renamed “The Restaurant Survival Guide” and he continues to post free advice and articles for restaurant professionals everywhere.
Jim has lived and worked in Norfolk VA, Los Angeles CA, Asheville N.C, St Croix USVI, and is currently the General Manager for Crafty Buffalo Kitchen and Taphouse in Salisbury, NC. He has a cat named Lando Catrissian and raised a squirrel named Tippy. Tippy resides in Los Feliz, CA.
